Roasted Asian Beet Salad

A super unique and delicious way to enjoy beets!

Ingredient

  • 2 cups golden beets trimmed and cubed
  • Olive oil
  • Toasted sesame oil
  • 2 TBS rice wine vinegar
  • 2 TBS toasted sesame oil
  • 1 TBS coconut aminos
  • 4 green onion, chopped
  • Pinch of red pepper flakes
  • Salt and pepper, to taste
  • 1/2 clove garlic, freshly grated
  • 1 tsp fresh ginger, freshly grated
  • Fresh cilantro, chopped

Method

  • Preheat your oven to 400°F 
  • Toss the beets lightly in olive oil and a bit of toasted sesame oil.
  • Spread the beets on a baking sheet & roast in the oven for 40 to 45 minutes, or until tender.
  • Remove the beets from the oven & let cool
  • While the beets are roasting, prepare the dressing by whisking together rice wine vinegar, toasted sesame oil, coconut aminos, green onion, red pepper flakes, salt, pepper, garlic, and ginger.
  • Once the beets have cooled, combine them with the dressing.
  • Garnish with fresh cilantro
  • Serve and enjoy!
