Beet & Red Lentil Rounds

Ingredients

For the Patties:
finely chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • ½ cup whole wheat flour
  • 2 eggs or flax eggs
  • Olive oil (for frying)
For the Herb Yogurt Sauce:

METHOD

1. Cook the red lentils in salted water until tender, then drain any excess liquid.
2. In a large bowl, combine the cooked lentils, grated beets, seasoning, onion, garlic, salt, and pepper.
3. Add the whole wheat flour for extra binding.
4. Crack in the eggs and mix everything thoroughly until well combined.
5. Heat a cast-iron pan over medium heat add a drizzle of olive oil.
6. Form the mixture into small patties & place them in the hot pan.
7. Cook for about 5 minutes on each side until golden brown and firm.
8. While the patties cook, prepare the yogurt sauce by mixing the yogurt, fresh lemon juice, & Italian seasoning in a small bowl.
9. Serve the patties over mixed greens & drizzle with the herb yogurt sauce.
